Cinnamon Maple Roasted Veggies

Cut some of your favorite root vegetables into small chunks. (I used butternut squash, beets and sweet potatoes) Add some brussel sprouts (halved) and red onions. Add a handful of dried cranberries and a handful of pecans. Toss everything together in about 2 tbsp olive oil and 1 tbsp maple syrup. Add salt, pepper and cinnamon. (I like to add a lot of cinnamon!!) Spread flat onto a cookie sheet and bake at 425 degrees for about 25 mins (or until tender.)

That’s it! Fast, simple and oooooh so good!
