This simple recipe offers a GREAT source of natural fuel for your mind and body. Plus, they CRUSH sugar cravings! They are vegan, gluten-free, and do not require any baking … and did I mention SUPER YUMMY!?

Here’s what you’ll need:

1 cup pitted Medjool dates (You can find these in the produce department at your local grocer. Costco sells them in bulk.)

1/2 cup pecans

1/3 cup canned pumpkin puree (I use the organic one from Trader Joe’s.)

1/4 cup unsweetened coconut flakes

2 tsp vanilla

1 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp ground cloves

Pinch of salt

Instructions:
  1. Place the dates into a small bowl and cover with water. Let soak for 10 minutes, then drain.
  2. Place the pecans into a food processor and pulse until finely ground. Add in the rest of the ingredients, including the soaked dates. Pulse until combined. Adjust the spices to taste. Place into the refrigerator for 30 minutes to chill.
  3. Use your hands to form the dough into small balls. Store in the refrigerator in an airtight container.

Once the balls are formed, you can also roll them in additional chopped nuts or coconut flakes if you’d like. This recipe makes about 15 balls. You can modify it as needed, then just store them in an airtight container in the refrigerator until you’re ready to eat. That’s it! Easy peasy! Plus, there’s hardly any clean up. Enjoy!
